2013 Open Hearth Cooking Classes

Saturday, February 09, 2013, 10:00am - 02:30pm

Join Historic Deerfield this winter to prepare and eat savory and sweet dishes of the past under the guidance of our experienced Open Hearth Cooks. Classes are held in the kitchen of the Visitor Center at Hall Tavern that dates to 1786. Hearth Cooks will teach you a variety of cookery techniques and lead discussions on how food preparation has changed over time, preservation technology, seaspnality, diet, and the availability of local and imported foodstuffs. A visit to a kitchen in one of the historic houses is part of the experience. A bibliography on open hearth cookery will be distributed. You will participate in the process and assist hearth cooks in the preparation of period recipes. Please dress comfortably, bring an apron, pen, and paper for notes. After the food is prepared, you will sit down together to enjoy the fruits of your labor. You may also bring a brown bag lunch if you do not wish to sample the food. 10 am - 2:30 pm.  The registration fee for each class is $55 per person ($50 for members). 413-775-7217
February 2 -Hearth Cooking Basics - Try a range of hearth cooking techniques and equipment
February 9- 17th Century Cooking -Experience how English settlers cooked before the inventions of the 18th century
February 16 - Cooking in the 18th Century - The 1786 Hall Tavern hearth and fireplace will be featured in this class
February 23 - Early 19th Century Cooking Techniques -The class will prepare dishes using innovations of the early 19th -century
March 2 - Baking Day - We fire up the beehive oven and bake bread, pies and cakes in this popular class
March 9 - A Late Winter Menu - Participants will re-create the dinner menu that is featured in the Williams House
March 16 - Cooking with Herbs - As we look toward the promise of spring gardening, you will prepare dishes with dried herbs from the Cook's Garden
